  • 1.5 lb ground beef 93% lean
  • 1 each yellow onion, diced
  • 3 clove garlic, minced
  • 2 tbsp taco seasoning or homemade
  • 10 oz diced tomatoes with green chiles drained
  • 1 cup corn thawed if frozen
  • 3 cup taco-flavored corn chips (crushed)
  • 2 cup shredded cheddar cheese divided
  • 1 cup sour cream
  • 3 each green onions (sliced)
  • 1 each jalapeño (optional) seeded and sliced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation Steps

  • Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • In a large skillet over medium-high heat, add the ground beef and diced onion. Cook until the beef is browned and the onion is softened, about 6–8 minutes. Drain excess fat.
  • Add the minced garlic and taco seasoning to the skillet and cook 1 minute. Stir in the drained diced tomatoes with green chiles and corn. Simmer 3–5 minutes to combine flavors. Season with salt and pepper to taste.
  • Spread half of the crushed corn chips in the prepared baking dish. Sprinkle half of the shredded cheddar over the chips. Spoon the beef mixture evenly over the cheese.
  • Top the beef layer with the remaining crushed chips and the rest of the shredded cheddar.
  • Bake uncovered for 15–20 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and let rest 5 minutes. Dollop with sour cream and garnish with sliced green onions and jalapeño if desired. Serve warm.

Notes

Leftovers keep well refrigerated for up to 3 days. Reheat covered in the oven at 350°F until warmed through. For a lighter version, use ground turkey and reduced-fat cheese.
