Preparation Steps
In a large bowl, beat the softened cream cheese until smooth using a hand mixer or stand mixer.
Add powdered sugar, lime zest, vanilla extract and salt; beat until fully incorporated and smooth.
Mix in the tequila and fresh lime juice until the mixture is creamy and slightly loose. Taste and adjust tequila or lime as desired.
Fold in the graham cracker crumbs a little at a time until the mixture holds together but is still moist enough to shape. If too dry, add 0.5 tbsp tequila or a splash of lime juice.
Using a teaspoon or small cookie scoop, form the mixture into 1-inch balls and place on a parchment-lined baking sheet.
Roll each ball in coarse sugar or coarse salt to coat, then chill the balls in the refrigerator for at least 30 minutes to firm up.
Serve chilled. Store leftovers covered in the refrigerator for up to 4 days.
Notes
For a non-alcoholic version, replace tequila with additional lime juice and a splash of orange extract. Chill thoroughly before serving so balls hold their shape.
