  • 2 cup graham cracker crumbs finely crushed
  • 8 oz cream cheese softened
  • 0.75 cup powdered sugar
  • 3 tbsp silver tequila adjust to taste
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest from 1 lime
  • 1 tsp vanilla extract
  • 0.25 tsp kosher salt for dough and optional for coating
  • 0.25 cup coarse sugar or coarse salt for rolling/finishing

Preparation Steps

  • In a large bowl, beat the softened cream cheese until smooth using a hand mixer or stand mixer.
  • Add powdered sugar, lime zest, vanilla extract and salt; beat until fully incorporated and smooth.
  • Mix in the tequila and fresh lime juice until the mixture is creamy and slightly loose. Taste and adjust tequila or lime as desired.
  • Fold in the graham cracker crumbs a little at a time until the mixture holds together but is still moist enough to shape. If too dry, add 0.5 tbsp tequila or a splash of lime juice.
  • Using a teaspoon or small cookie scoop, form the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  • Roll each ball in coarse sugar or coarse salt to coat, then chill the balls in the refrigerator for at least 30 minutes to firm up.
  • Serve chilled. Store leftovers covered in the refrigerator for up to 4 days.

Notes

For a non-alcoholic version, replace tequila with additional lime juice and a splash of orange extract. Chill thoroughly before serving so balls hold their shape.
