Preparation Steps
Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
Add eggs and vanilla extract; mix until fully combined.
In another bowl, whisk together flour, baking powder, and cinnamon.
Gradually incorporate dry ingredients into the wet mixture.
Fold in diced apples gently.
Spoon the batter into prepared liners, filling each about two-thirds full.
Bake for about 20 minutes or until a toothpick inserted comes out clean.
Notes
These cupcakes are best served warm. Top with a scoop of vanilla ice cream for an extra treat!
