  • 4 pieces boneless skinless chicken breasts about 1.5 lb total
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tbsp chili powder adjust for heat preference
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp ground cumin
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tbsp fresh lime juice
  • 1 tbsp honey
  • 0.25 cup fresh cilantro chopped, for garnish

Preparation Steps

  • Preheat the oven to 400°F (200°C). Pat the chicken breasts dry with paper towels.
  • In a small bowl, whisk together olive oil, smoked paprika, chili powder, garlic powder, onion powder, ground cumin, salt, black pepper, lime juice, and honey to make the spice marinade.
  • Brush the marinade evenly over both sides of each chicken breast. Let sit at room temperature for 10 minutes to absorb flavors.
  • Heat a large oven-safe skillet over medium-high heat. Add a drizzle of oil and sear the chicken breasts 2 to 3 minutes per side until golden brown.
  • Transfer the skillet to the preheated oven and bake for 18 to 22 minutes, or until an instant-read thermometer inserted into the thickest part reads 165°F (74°C).
  • Remove the chicken from the oven and let rest for 5 minutes. Garnish with chopped cilantro and serve.

Notes

For extra heat, sprinkle a pinch of cayenne into the marinade. Leftovers keep in the fridge for up to 3 days and are great sliced over salads or in sandwiches.
