Instructions
Preparation Steps
Preheat the oven to 400°F (200°C). Pat the chicken breasts dry with paper towels.
In a small bowl, whisk together olive oil, smoked paprika, chili powder, garlic powder, onion powder, ground cumin, salt, black pepper, lime juice, and honey to make the spice marinade.
Brush the marinade evenly over both sides of each chicken breast. Let sit at room temperature for 10 minutes to absorb flavors.
Heat a large oven-safe skillet over medium-high heat. Add a drizzle of oil and sear the chicken breasts 2 to 3 minutes per side until golden brown.
Transfer the skillet to the preheated oven and bake for 18 to 22 minutes, or until an instant-read thermometer inserted into the thickest part reads 165°F (74°C).
Remove the chicken from the oven and let rest for 5 minutes. Garnish with chopped cilantro and serve.
Notes
For extra heat, sprinkle a pinch of cayenne into the marinade. Leftovers keep in the fridge for up to 3 days and are great sliced over salads or in sandwiches.
