Instructions
Preparation Steps
Lightly coat the inside of a 6-quart slow cooker with olive oil or cooking spray.
Place the halved potatoes and sliced onion in the bottom of the slow cooker.
Add the trimmed green beans and diced ham on top of the potatoes and onions.
Sprinkle minced garlic, salt, black pepper and smoked paprika over the vegetables and ham.
Pour the chicken broth over the ingredients and dot with pieces of butter.
Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until potatoes and green beans are tender.
Taste and adjust seasoning, stir gently to combine, then garnish with chopped parsley before serving.
Notes
Serve hot with crusty bread or over rice. Store leftovers in an airtight container in the refrigerator for 3–4 days.
