  • 2 cups cubed butternut squash peeled and diced
  • 1 can coconut milk full-fat for creaminess
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon curry powder adjust to taste
  • 1 cup vegetable broth or chicken broth
  • 1 cup spinach fresh or frozen
  • 0.5 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground

Preparation Steps

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic, and cook for another minute until fragrant.
  • Add the curry powder, cubed butternut squash, vegetable broth, salt, and pepper.
  • Cover and simmer for 20 minutes or until the squash is tender.
  • Stir in the coconut milk and spinach, cooking for an additional 5 minutes.
  • Taste and adjust seasoning if needed before serving.

Notes

Serve with rice or naan for a complete meal. Add a squeeze of lime for extra flavor!
