Pina Colada Salad
A light, tropical salad inspired by the classic piña colada — fresh pineapple, toasted coconut, creamy dressing and crunchy macadamia nuts. Great chilled as a side or dessert.

Instructions
Preparation Steps
In a medium bowl, whisk together mayonnaise, Greek yogurt, honey and lime juice until smooth and well combined.
Add the chopped pineapple to a large mixing bowl. Pour the dressing over the pineapple and gently fold to combine.
Stir in the toasted shredded coconut, reserving a small handful for topping if desired.
Cover and refrigerate the salad for at least 30 minutes to allow flavors to meld and the coconut to soften slightly.
Before serving, fold in most of the chopped macadamia nuts and garnish with remaining nuts and halved maraschino cherries.
Serve chilled as a side dish or light dessert.
Notes
Make the salad a few hours ahead for best flavor. Swap macadamia nuts for toasted pecans or walnuts if preferred.
