A light, tropical salad inspired by the classic piña colada — fresh pineapple, toasted coconut, creamy dressing and crunchy macadamia nuts. Great chilled as a side or dessert.

  • 2.5 cup fresh pineapple, chopped
  • 1 cup shredded sweetened coconut lightly toasted
  • 0.5 cup mayonnaise use regular or light
  • 0.5 cup plain Greek yogurt full-fat or low-fat
  • 0.25 cup honey
  • 1 tbsp fresh lime juice
  • 0.5 cup macadamia nuts, chopped toasted, optional
  • 0.5 cup maraschino cherries, halved optional garnish

Preparation Steps

  • In a medium bowl, whisk together mayonnaise, Greek yogurt, honey and lime juice until smooth and well combined.
  • Add the chopped pineapple to a large mixing bowl. Pour the dressing over the pineapple and gently fold to combine.
  • Stir in the toasted shredded coconut, reserving a small handful for topping if desired.
  • Cover and refrigerate the salad for at least 30 minutes to allow flavors to meld and the coconut to soften slightly.
  • Before serving, fold in most of the chopped macadamia nuts and garnish with remaining nuts and halved maraschino cherries.
  • Serve chilled as a side dish or light dessert.

Notes

Make the salad a few hours ahead for best flavor. Swap macadamia nuts for toasted pecans or walnuts if preferred.
