A classic Southern-style pork loin braised in Coca-Cola with a sweet-savory glaze. Tender, caramelized, and perfect for weeknight dinners or feeding a crowd.
Preheat the oven to 325°F (163°C). Pat the pork loin dry and season all over with salt and pepper.
In a medium bowl, whisk together Coca-Cola, brown sugar, ketchup, apple cider vinegar, Worcestershire sauce, and minced garlic until smooth.
Place the pork loin in a Dutch oven or roasting pan. Pour the Coca-Cola mixture over the pork, cover tightly with a lid or foil, and transfer to the oven.
Bake for about 75 minutes covered, then remove the cover and baste the pork with the pan juices. Continue roasting uncovered for an additional 15 minutes to caramelize the glaze, or until the internal temperature reaches 145°F (63°C).
Remove the pork from the oven and let it rest for 10 minutes. Slice the pork loin and spoon the reduced pan juices over the slices before serving.

Leftovers keep well refrigerated for up to 3 days. Reheat gently with a splash of water or additional Coke to loosen the sauce.
