  • 2 medium English cucumbers thinly sliced
  • 3 medium ripe tomatoes cut into wedges
  • 0.5 medium red onion thinly sliced
  • 2 tbsp extra-virgin olive oil
  • 3 tbsp white wine vinegar
  • 1 tsp granulated sugar optional, balances acidity
  • 1 tsp fine sea salt adjust to taste
  • 0.25 tsp freshly ground black pepper
  • 2 tbsp fresh dill chopped

Preparation Steps

  • Place the sliced cucumbers, tomato wedges, and thinly sliced red onion in a large bowl.
  • In a small bowl or jar, whisk together the olive oil, white wine vinegar, sugar, salt, and black pepper until the sugar and salt dissolve.
  • Pour the dressing over the vegetables and toss gently to combine.
  • Stir in the chopped fresh dill. Taste and adjust salt and pepper as needed.
  • Cover and refrigerate for at least 15 minutes to allow flavors to meld. Serve chilled or at cool room temperature.

Notes

For best flavor, let the salad marinate for 30 minutes. Add crumbled feta or olives for a Mediterranean twist.
