HOMEMADE PIMENTO CHEESE

Classic Southern pimento cheese made with sharp cheddar, cream cheese, mayonnaise and diced pimientos. Perfect as a spread for crackers, sandwiches, or veggies.

  • 3 cup sharp cheddar cheese, freshly shredded packed
  • 8 ounce cream cheese softened
  • 0.5 cup mayonnaise
  • 4 ounce pimentos, diced drained
  • 2 tablespoon green onion finely chopped
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Worcestershire sauce
  • 0.25 teaspoon cayenne pepper optional, adjust to taste
  • 0.5 teaspoon salt adjust as needed
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a large bowl, beat the softened cream cheese until smooth using a hand mixer or sturdy whisk.
  • Add the mayonnaise, Dijon mustard, Worcestershire sauce, salt, black pepper, and cayenne pepper to the cream cheese and mix until well combined.
  • Fold in the shredded sharp cheddar and diced pimentos until evenly distributed. Stir in the chopped green onion.
  • Taste and adjust seasoning with additional salt, pepper, or cayenne if desired.
  • Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled with crackers, celery, or on sandwiches.

Notes

Store in an airtight container in the refrigerator for up to 5 days. For a smoother spread, pulse briefly in a food processor.
