GRANDMA’S HAMBURGER & VEGETABLE SOUP

Hearty, comforting hamburger and vegetable soup made with browned ground beef, a mix of fresh vegetables, tomatoes and beef broth. Ready in under an hour and perfect for family dinners.

  • 1 lb ground beef (80/20)
  • 1 tbsp olive oil
  • 1 each yellow onion, medium chopped
  • 2 clove garlic minced
  • 2 each carrots peeled and sliced
  • 2 stalk celery sliced
  • 2 each potatoes peeled and diced (about 1-inch)
  • 1 cup green beans trimmed and cut
  • 1 cup corn frozen or fresh
  • 6 cup beef broth low-sodium preferred
  • 1 can diced tomatoes 14.5 oz
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1.5 tsp salt
  • 1 tsp black pepper freshly ground
  • 2 tbsp fresh parsley chopped

Preparation Steps

  • Heat a large Dutch oven or heavy pot over medium-high heat. Add olive oil.
  • Add ground beef and cook, breaking up with a spoon, until browned and no longer pink, about 6–8 minutes. Drain excess fat if necessary.
  • Add chopped onion and minced garlic to the pot and sauté 3–4 minutes until softened and fragrant.
  • Stir in carrots, celery, potatoes, green beans and corn. Cook 2–3 minutes to combine flavors.
  • Pour in beef broth, diced tomatoes (with juices) and tomato paste. Add Worcestershire sauce, salt and pepper. Stir well.
  • Bring the soup to a boil, then reduce heat to low and simmer, uncovered, for 25–30 minutes or until vegetables are tender.
  • Taste and adjust seasoning if needed. Stir in chopped parsley just before serving.
  • Ladle soup into bowls and serve hot with crusty bread or crackers.

Notes

Leftovers keep well in the refrigerator for 3–4 days and make great lunches. Freeze for up to 3 months (thaw before reheating).
