  • 1.5 cups quinoa rinsed and drained
  • 1 lb chicken breast cooked and shredded
  • 2 cups chicken broth low sodium
  • 1 can cannellini beans drained and rinsed
  • 1 cup corn fresh or frozen
  • 1 cup diced tomatoes with juices
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil for sautéing
  • 1 tbsp cumin ground
  • 1 tbsp chili powder to taste
  • 1 tsp salt adjust as needed
  • 1 tsp black pepper freshly ground

Instructions
 

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Sauté onion and garlic until soft.
  • Stir in cumin and chili powder, cooking for 1 minute until fragrant.
  • Add shredded chicken, quinoa, chicken broth, diced tomatoes, corn, and beans.
  • Bring to a boil, then reduce heat and simmer for 25 minutes, until quinoa is cooked.
  • Season with salt and pepper to taste before serving.

Notes

Serve with avocado or cilantro for extra flavor and garnish.
