  • 1 lb boneless chicken breast Cooked and shredded
  • 8 oz rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 2 tbsp soy sauce For dipping
  • 1 tbsp rice vinegar For dipping

Preparation Steps

  • Start by cooking the chicken until it’s fully done, then shred it.
  • Prepare the veggies by washing and cutting them into thin strips.
  • Soak a rice paper wrapper in warm water until it softens.
  • Place some shredded chicken and vegetables in the center of the wrapper.
  • Fold the sides of the wrapper over the filling, then roll it up tightly.
  • Repeat until all ingredients are used up.

Notes

Serve the rolls with a mix of soy sauce and rice vinegar for dipping. Enjoy fresh for best taste!
