  • 1.25 cups canned pumpkin puree
  • 2 tbsp tahini
  • 0.5 cup olive oil extra for drizzling
  • 2 cloves garlic minced
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp ground cumin
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper freshly ground
  • 1 tbsp maple syrup to balance flavors

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Spread the pumpkin puree on a baking sheet and roast for about 20 minutes.
  • In a food processor, combine the roasted pumpkin, tahini, olive oil, minced garlic, lemon juice, cumin, salt, pepper, and maple syrup.
  • Process until smooth, adding water if necessary to achieve desired consistency.
  • Taste and adjust seasoning if needed. Serve with a drizzle of olive oil.

Notes

Try adding a sprinkle of paprika on top for extra flavor!
