Instructions
Preparation Steps
Preheat your oven to 400°F (200°C).
Spread the pumpkin puree on a baking sheet and roast for about 20 minutes.
In a food processor, combine the roasted pumpkin, tahini, olive oil, minced garlic, lemon juice, cumin, salt, pepper, and maple syrup.
Process until smooth, adding water if necessary to achieve desired consistency.
Taste and adjust seasoning if needed. Serve with a drizzle of olive oil.
Notes
Try adding a sprinkle of paprika on top for extra flavor!
