Instructions
Preparation Steps
Begin by whipping the heavy cream until soft peaks form.
In another bowl, combine mascarpone, powdered sugar, and vanilla extract until smooth.
Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
Dip ladyfinger cookies quickly into the espresso and layer them in a dish.
Spread half of the mascarpone mixture over the ladyfingers and top with half of the raspberries.
Repeat the layers with remaining ingredients, finishing with the mascarpone on top.
Chill in the refrigerator for at least 2 hours before serving to set.
Notes
For extra flavor, sprinkle with cocoa powder before serving. For garnish, use fresh mint leaves.
