  • 1 cup pumpkin puree not pumpkin pie filling
  • 8 oz cream cheese softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 cup graham cracker crumbs
  • 1 tbsp unsalted butter melted

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a small bowl, mix together the graham cracker crumbs and melted butter.
  • Press the crumb mixture firmly into the bottom of a mini muffin pan to form the crust.
  • In a large bowl, beat the softened cream cheese and sugar until smooth.
  • Add the pumpkin puree, eggs, vanilla, and pumpkin pie spice to the mixture. Blend until well combined.
  • Pour the pumpkin mix over the crust in the muffin cups.
  • Bake for about 25-30 minutes, or until set.
  • Let cool before removing from the muffin pan.

Notes

These bites can be topped with whipped cream for extra flavor. Enjoy with a sprinkle of cinnamon!
