Instructions
Preparation Steps
In a large pot, sauté the onion until translucent.
Add garlic and cook for another minute.
Mix in the chicken breasts, broth, beans, corn, cumin, and chili powder.
Bring to a boil, then reduce heat and simmer for 25 minutes.
Stir in the heavy cream and heat through.
Serve hot, garnished with cilantro.
Notes
Try adding a sprinkle of lime juice for an extra zing!
