  • 3 cup all-purpose flour
  • 1 cup unsalted butter cold, cubed (2 sticks)
  • 8 ounce cream cheese cold, full-fat
  • 0.25 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.75 cup apricot jam or favorite fruit jam
  • 0.25 cup powdered sugar for dusting

  • In a large bowl, beat the cold cubed butter and cream cheese together with the granulated sugar until smooth and creamy.
  • Add the egg yolks and vanilla extract and beat until fully incorporated.
  • Stir in the flour and salt until a soft dough forms. Do not overmix — the dough should come together but remain tender.
  • Shape the dough into a disk, wrap in plastic, and chill in the refrigerator for at least 1 hour.
  • Preheat the oven to 375°F (190°C). On a lightly floured surface, roll the chilled dough to about 1/8 inch thickness and cut into 2.5-inch squares or rounds.
  • Place a small spoonful (about 1/2 tablespoon) of apricot jam in the center of each square. Fold opposite corners toward the center to form the traditional kolacky shape, leaving the jam visible.
  • Arrange the kolacky on a baking sheet lined with parchment paper and bake for 12 to 15 minutes, until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack. Once cool, dust with powdered sugar before serving.

Notes

Store kolacky in an airtight container at room temperature for up to 3 days. You can freeze unbaked shaped cookies for up to 1 month; bake from frozen, adding a few extra minutes to the baking time.
