  • 0.5 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon For extra flavor
  • 0.5 tsp salt

Preparation Steps

  • Preheat the oven to 350°F (175°C). Line a muffin pan with liners.
  • In a bowl, whisk together pumpkin, sugar, oil, and eggs until smooth.
  • In another bowl, mix flour, baking powder, cinnamon, and salt.
  • Gradually mix dry ingredients into the wet mixture until just combined.
  • Pour batter into the prepared muffin cups, filling each about 3/4 full.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  • Let muffins cool for a few minutes in the pan before transferring to a wire rack.

Notes

Try adding chocolate chips or nuts for extra flavor and texture.
