Instructions
Preparation Steps
Preheat the oven to 350°F (175°C). Line a muffin pan with liners.
In a bowl, whisk together pumpkin, sugar, oil, and eggs until smooth.
In another bowl, mix flour, baking powder, cinnamon, and salt.
Gradually mix dry ingredients into the wet mixture until just combined.
Pour batter into the prepared muffin cups, filling each about 3/4 full.
Bake for 18-20 minutes or until a toothpick inserted comes out clean.
Let muffins cool for a few minutes in the pan before transferring to a wire rack.
Notes
