  • 4 large eggs large eggs Fresh and preferably organic
  • 6 oz feta cheese Crumbled feta works best
  • 2 tbsp olive oil Extra virgin for more flavor
  • 1 tbsp fresh parsley Chopped, for garnish
  • 1 tsp black pepper To taste

Instructions
 

Preparation Steps

  • Heat the olive oil in a non-stick skillet over medium heat.
  • Add the crumbled feta cheese and cook for 2 minutes until lightly browned.
  • Crack the eggs into the skillet on top of the feta, sprinkle with black pepper.
  • Cook for another 3 minutes or until the eggs are set to your liking.
  • Remove from heat and sprinkle freshly chopped parsley over the top.

Notes

Serve with crusty bread for a delightful breakfast. Add a sprinkle of chili flakes for a spicy kick!
