  • 1.5 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cans white beans drained and rinsed
  • 1 cup broth chicken or vegetable
  • 1 cup sour cream
  • 1 cup plain yogurt
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup fresh cilantro chopped for garnish

Preparation Steps

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and cook until translucent, about 5-7 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Add the chicken pieces to the pot and cook until browned.
  • Mix in the white beans, broth, cumin, chili powder, salt, and pepper.
  • Simmer for about 20 minutes, stirring occasionally.
  • Remove from heat and stir in sour cream and yogurt until smooth.
  • Serve hot, garnished with fresh cilantro.
