  • 1 cup chicken broth low sodium preferred
  • 1 cup heavy cream for richness
  • 1 cup corn fresh or frozen
  • 1 tbsp olive oil for sautéing
  • 1 tsp cumin for flavor
  • 1 tsp garlic powder adds depth
  • 0.5 tsp onion powder for seasoning
  • 0.5 tsp chili powder to taste

Preparation Steps

  • Heat olive oil in a large pot over medium heat.
  • Add chicken cubes and cook until no longer pink, about 5–7 minutes.
  • Stir in the indentured spices: cumin, garlic powder, onion powder, and chili powder.
  • Pour in chicken broth and mix in the white beans and corn.
  • Slowly add the heavy cream and stir until combined.
  • Let simmer for 15–20 minutes to thicken, stirring occasionally.

Notes

Serve with a sprinkle of cilantro for freshness or sliced avocado for creaminess.
