  • 3 tbsp coconut oil Can substitute with vegetable oil.
  • 1 can coconut milk Full fat for creaminess.
  • 1 tbsp soy sauce Adjust for saltiness preference.
  • 1 tsp garlic powder For extra flavor.
  • 2 tsp ginger Grated or powdered.
  • 0.5 cup green onions Chopped.
  • 1 tbsp lime juice Freshly squeezed is best.

Preparation Steps

  • Heat coconut oil in a large skillet over medium heat.
  • Add chicken thighs and cook until golden brown, about 7-8 minutes per side.
  • Stir in garlic powder, ginger, soy sauce, and coconut milk; bring to a simmer.
  • Simmer for 15 minutes until the chicken is cooked through and the sauce is thickened.
  • Serve the chicken over cooked rice, garnished with green onions and a drizzle of lime juice.
