  • 1.5 lb boneless chicken thighs You can use breasts if preferred.
  • 6 cups chicken broth
  • 2 medium carrots, chopped
  • 1 large onion, diced
  • 2 stalks celery, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 tbsp olive oil For sautéing.
  • 1 tbsp fresh parsley, chopped For garnish.
  • 1 tsp salt Adjust to taste.
  • 1 tsp black pepper Freshly ground for flavor.

Preparation Steps

  • Heat olive oil in a large pot over medium heat.
  • Sauté the onions, garlic, carrots, and celery until onions are translucent.
  • Add the chicken and brown for about 5 minutes.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat and simmer for 30 minutes, skimming any foam.
  • Add the peas, salt, and pepper; stir well.
  • Serve hot, garnished with parsley.

Notes

This soup pairs beautifully with crusty bread. For added flavor, squeeze fresh lime before serving.
