Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat.
Sauté the onions, garlic, carrots, and celery until onions are translucent.
Add the chicken and brown for about 5 minutes.
Pour in chicken broth and bring to a boil.
Reduce heat and simmer for 30 minutes, skimming any foam.
Add the peas, salt, and pepper; stir well.
Serve hot, garnished with parsley.
Notes
This soup pairs beautifully with crusty bread. For added flavor, squeeze fresh lime before serving.
