  • 1.5 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup buffalo sauce
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 0.5 tbsp salt to taste
  • 1 cup cream cheese softened
  • 0.5 cup green onions sliced for garnish

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until soft, about 5 minutes.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Add chicken pieces to the pot, cooking until browned, around 8-10 minutes.
  • Pour in the chicken broth, buffalo sauce, black beans, corn, cumin, chili powder, and salt. Bring to a boil.
  • Reduce heat and simmer for 20 minutes, allowing flavors to meld.
  • Stir in softened cream cheese until fully incorporated.
  • Serve hot, garnished with sliced green onions.

Notes

This chili pairs well with tortilla chips or a side of cornbread for a complete meal.
