Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until soft, about 5 minutes.
Stir in minced garlic and cook for an additional minute until fragrant.
Add chicken pieces to the pot, cooking until browned, around 8-10 minutes.
Pour in the chicken broth, buffalo sauce, black beans, corn, cumin, chili powder, and salt. Bring to a boil.
Reduce heat and simmer for 20 minutes, allowing flavors to meld.
Stir in softened cream cheese until fully incorporated.
Serve hot, garnished with sliced green onions.
Notes
This chili pairs well with tortilla chips or a side of cornbread for a complete meal.
