  • 2.5 lb boneless skinless chicken breasts
  • 6 oz stovetop style stuffing mix
  • 1 can (10.5 oz) condensed cream of chicken soup undiluted
  • 1 cup chicken broth low sodium preferred

Preparation Steps

  • Spray the inside of a 6-quart slow cooker with nonstick spray.
  • Place the chicken breasts in an even layer in the bottom of the slow cooker.
  • Pour the can of condensed cream of chicken soup over the chicken, then pour the cup of chicken broth over the top.
  • Sprinkle the dry stuffing mix evenly over the soup and broth; do not stir. Cover the slow cooker.
  • Cook on HIGH for 3 to 4 hours (or LOW for 6 to 7 hours) until the chicken reaches 165°F and is tender.
  • Remove the chicken to a cutting board, shred with two forks, then return shredded chicken to the slow cooker and gently stir to combine with the stuffing. Let sit 5 minutes before serving.

Notes

Leftovers keep in an airtight container in the refrigerator for up to 3 days. Reheat covered in the microwave or in a 350°F oven until warmed through.
