  • 2 cups pasta, uncooked (elbow or shells)
  • 1 can white beans, drained
  • 2 cups chicken broth Low sodium recommended.
  • 1 cup cream cheese, softened
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1.5 cups shredded cheddar cheese For topping.
  • 1 tbsp olive oil For cooking.
  • 1 cup corn, frozen Optional for added sweetness.

Preparation Steps

  • In a large pot, heat olive oil over medium heat.
  • Add shredded chicken and sauté for 3-4 minutes until heated through.
  • Stir in the chicken broth, pasta, corn, and beans. Bring to a boil.
  • Reduce heat and let simmer for 10-12 minutes until the pasta is tender.
  • Mix in cream cheese, cumin, and garlic powder until creamy.
  • Top with shredded cheddar cheese and let it melt before serving.

Notes

For extra flavor, add some lime juice and fresh cilantro when serving.
