Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat.
Add shredded chicken and sauté for 3-4 minutes until heated through.
Stir in the chicken broth, pasta, corn, and beans. Bring to a boil.
Reduce heat and let simmer for 10-12 minutes until the pasta is tender.
Mix in cream cheese, cumin, and garlic powder until creamy.
Top with shredded cheddar cheese and let it melt before serving.
Notes
For extra flavor, add some lime juice and fresh cilantro when serving.
