  • 1.5 cups small pasta shells
  • 2 cans canned kidney beans rinsed and drained
  • 3 cups vegetable broth low sodium
  • 1 can diced tomatoes with juices
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil for sautéing
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes optional for heat
  • 0.5 tsp salt to taste
  • 0.5 tsp black pepper to taste

Preparation Steps

  • In a large pot, heat the olive oil over medium heat.
  • Sauté the onion, garlic, carrots, and celery until softened, about 5 minutes.
  • Add the diced tomatoes, vegetable broth, and beans. Bring to a simmer.
  • Stir in the pasta and seasonings. Cook until pasta is tender, about 10-12 minutes.
  • Taste and adjust salt and pepper as needed before serving hot.

Notes

Serve with fresh parsley or grated cheese on top for extra flavor!
