  • 1.5 lb boneless chicken breast cut into bite-sized pieces
  • 8 cup chicken broth low-sodium preferred
  • 2 cup egg noodles or any pasta of choice
  • 1 cup carrots sliced
  • 1 cup celery diced
  • 1 onion chopped medium-sized
  • 2 clove garlic minced
  • 1 tsp thyme dried
  • 1 tsp black pepper freshly ground
  • 1 tbsp olive oil for sautéing
  • 2 tbsp parsley fresh, chopped for garnish

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, sauté until softened.
  • Stir in garlic and thyme, cooking for an additional minute until fragrant.
  • Add chicken pieces to the pot and cook until lightly browned, about 5 minutes.
  • Pour in the chicken broth and bring to a simmer. Then, add the egg noodles.
  • Season with black pepper and simmer for 20 minutes until noodles are tender and chicken is cooked through.
  • Serve hot, garnished with fresh parsley.

Notes

For a creamy variation, stir in a little heavy cream just before serving. Enjoy with crusty bread!
