Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, sauté until softened.
Stir in garlic and thyme, cooking for an additional minute until fragrant.
Add chicken pieces to the pot and cook until lightly browned, about 5 minutes.
Pour in the chicken broth and bring to a simmer. Then, add the egg noodles.
Season with black pepper and simmer for 20 minutes until noodles are tender and chicken is cooked through.
Serve hot, garnished with fresh parsley.
Notes
For a creamy variation, stir in a little heavy cream just before serving. Enjoy with crusty bread!
