Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add diced onion, and sauté until translucent, about 5 minutes.
Stir in minced garlic, diced carrots, and celery. Cook for another 3–4 minutes, stirring occasionally.
Add lentils, broth, cumin, thyme, and black pepper to the pot. Bring to a boil.
Reduce the heat to low and simmer for about 30 minutes, until the lentils are tender.
Adjust seasoning as needed. Serve hot, garnished with fresh herbs if desired.
Notes
This soup can be stored in the fridge for up to a week. Top with a dollop of yogurt or a sprinkle of fresh parsley for added flavor.
