  • 1.5 cups dry lentils or use your favorite variety.
  • 1 medium onion, diced finely chopped for better flavor absorption.
  • 2 carrots carrots, chopped adds sweetness and color.
  • 2 stalks celery, diced provides crunch.
  • 4 cups vegetable broth for a richer taste.
  • 3 cloves garlic, minced use more for extra flavor.
  • 1 teaspoon cumin can substitute with coriander.
  • 1 teaspoon thyme or use fresh thyme.
  • 0.5 teaspoon black pepper to taste.
  • 1 tablespoon olive oil for sautéing.

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add diced onion, and sauté until translucent, about 5 minutes.
  • Stir in minced garlic, diced carrots, and celery. Cook for another 3–4 minutes, stirring occasionally.
  • Add lentils, broth, cumin, thyme, and black pepper to the pot. Bring to a boil.
  • Reduce the heat to low and simmer for about 30 minutes, until the lentils are tender.
  • Adjust seasoning as needed. Serve hot, garnished with fresh herbs if desired.

Notes

This soup can be stored in the fridge for up to a week. Top with a dollop of yogurt or a sprinkle of fresh parsley for added flavor.
