  • 0.25 cup fresh cilantro chopped, for garnish

Preparation Steps

  • In a large skillet over medium heat, add the shrimp. Cook for 5-7 minutes or until they turn pink.
  • Add corn to the skillet with the shrimp, stirring occasionally for about 3 minutes.
  • In a bowl, mix mayonnaise, lime juice, chili powder, cumin, salt, and pepper.
  • Combine the shrimp and corn mixture with the sauce. Stir well to coat everything evenly.
  • Serve the mixture topped with crumbled feta and cilantro for a fresh finish.

Notes

For a spicy kick, add jalapeños to the dish. Serve it with tortillas for a complete meal!
