  • 1.5 lb boneless chicken thighs use skinless for less fat
  • 0.5 cup soy sauce low sodium is recommended
  • 0.25 cup brown sugar for a touch of sweetness
  • 2 tbsp sesame oil adds rich flavor
  • 1 tbsp gochujang Korean chili paste for heat
  • 4 cloves garlic minced for flavor
  • 1 tbsp ginger freshly grated
  • 2 tbsp scallions sliced for garnish
  • 1 tbsp sesame seeds toasted for topping

Preparation Steps

  • In a large bowl, combine soy sauce, brown sugar, sesame oil, gochujang, garlic, and ginger.
  • Add chicken thighs to the marinade, cover, and refrigerate for at least 30 minutes.
  • Preheat grill to medium-high heat. Remove chicken from marinade, reserving marinade.
  • Grill chicken for 6-7 minutes per side, until cooked through.
  • In a saucepan, boil reserved marinade for 5 minutes to ensure safety.
  • Serve chicken with boiled marinade drizzled on top, garnished with scallions and sesame seeds.

Notes

For extra crunch, add some toasted peanuts. This dish pairs well with steamed rice.
