Instructions
Preparation Steps
Preheat the oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
Stir in the butternut squash and cook until tender, about 10 minutes.
Mix in spinach, nutmeg, salt, and pepper; cook until spinach wilts. Remove from heat.
In a baking dish, spread a thin layer of ricotta, then place noodles on top.
Layer half of the butternut squash mixture over the noodles. Sprinkle with mozzarella.
Repeat layers, finishing with noodles topped with ricotta and parmesan cheese.
Cover with foil and bake for 30 minutes, then uncover and bake an additional 20 minutes until golden.
Let it rest for 10 minutes before slicing and serving.
Notes
Serve with a side salad or garlic bread for a complete meal. You can add a pinch of red pepper flakes for extra heat.
