  • 2 cups butternut squash, peeled and cubed
  • 10 oz fresh spinach, roughly chopped
  • 9 lasagna noodles lasagna noodles, no boil
  • 15 oz ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 tbsp olive oil for sautéing
  • 2 cloves garlic, minced
  • 1 tsp nutmeg
  • 1 tsp salt
  • 0.5 tsp black pepper

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  • Stir in the butternut squash and cook until tender, about 10 minutes.
  • Mix in spinach, nutmeg, salt, and pepper; cook until spinach wilts. Remove from heat.
  • In a baking dish, spread a thin layer of ricotta, then place noodles on top.
  • Layer half of the butternut squash mixture over the noodles. Sprinkle with mozzarella.
  • Repeat layers, finishing with noodles topped with ricotta and parmesan cheese.
  • Cover with foil and bake for 30 minutes, then uncover and bake an additional 20 minutes until golden.
  • Let it rest for 10 minutes before slicing and serving.

Notes

Serve with a side salad or garlic bread for a complete meal. You can add a pinch of red pepper flakes for extra heat.
