  • 1 cup buttermilk
  • 4 large eggs

  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla and mashed blackberries.
  • In another bowl, combine flour, baking powder, baking soda, and salt.
  • Gradually add the dry mix to the creamed mixture, alternating with buttermilk until smooth.
  • Divide the batter evenly into the prepared pans.
  • Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  • Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve with whipped cream and extra blackberries for a delightful presentation. You can also add lemon zest for a citrus touch.
