Preparation Steps
Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
In a large bowl, cream butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla and mashed blackberries.
In another bowl, combine flour, baking powder, baking soda, and salt.
Gradually add the dry mix to the creamed mixture, alternating with buttermilk until smooth.
Divide the batter evenly into the prepared pans.
Bake for 30-35 minutes or until a toothpick inserted comes out clean.
Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Serve with whipped cream and extra blackberries for a delightful presentation. You can also add lemon zest for a citrus touch.
