Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Add diced onion and sauté until soft.
Stir in minced garlic, cooking for another minute until fragrant.
Add ground turkey and cook until browned, breaking it up with a spoon.
Mix in the butternut squash, diced tomatoes, black beans, chicken broth, chili powder, cumin, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 25 minutes until squash is tender.
Notes
Serve hot with crusty bread. For extra zest, add a squeeze of lime before serving.
