  • 1.25 lb ground turkey use lean turkey for a healthier option
  • 1 large butternut squash peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil "not null"
  • 28 oz canned diced tomatoes with juice
  • 15 oz canned black beans drained and rinsed
  • 1 cup chicken broth "not null"
  • 2 tbsp chili powder adjust to taste
  • 1 tsp cumin "not null"
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper "not null"

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add diced onion and sauté until soft.
  • Stir in minced garlic, cooking for another minute until fragrant.
  • Add ground turkey and cook until browned, breaking it up with a spoon.
  • Mix in the butternut squash, diced tomatoes, black beans, chicken broth, chili powder, cumin, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 25 minutes until squash is tender.

Notes

Serve hot with crusty bread. For extra zest, add a squeeze of lime before serving.
