  • 1.5 lb ground beef
  • 1 cup cooked rice
  • 2 cups bell peppers, diced Use a mix of colors for presentation.
  • 1 can diced tomatoes 15 oz can with herbs
  • 1 cup onion, chopped
  • 1 cup cheddar cheese, shredded Use sharp cheddar for more flavor.
  • 2 tbsp olive oil
  • 2 tbsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper

Preparation Steps

  • Preheat your oven to 375°F.
  • Heat olive oil in a large skillet over medium heat. Add chopped onions and cook until translucent.
  • Stir in ground beef, cooking until browned. Drain excess fat.
  • Add bell peppers, tomatoes, cooked rice, and seasonings. Mix well and cook for 5 minutes.
  • Transfer mixture to a greased baking dish. Sprinkle shredded cheese on top.
  • Bake covered for 25 minutes, then uncover and bake for an additional 15 minutes until cheese is bubbling.

Notes

This casserole pairs well with a fresh salad. You can add heat by including jalapeños in the mix.
