Instructions
Preparation Steps
Preheat your oven to 375°F.
Heat olive oil in a large skillet over medium heat. Add chopped onions and cook until translucent.
Stir in ground beef, cooking until browned. Drain excess fat.
Add bell peppers, tomatoes, cooked rice, and seasonings. Mix well and cook for 5 minutes.
Transfer mixture to a greased baking dish. Sprinkle shredded cheese on top.
Bake covered for 25 minutes, then uncover and bake for an additional 15 minutes until cheese is bubbling.
Notes
This casserole pairs well with a fresh salad. You can add heat by including jalapeños in the mix.
