Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat.
Add the chopped onion and sauté until translucent.
Stir in diced zucchini and potatoes, cooking for about 5 minutes.
Add corn, smoked paprika, salt, and pepper.
Pour in the broth, bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in the heavy cream and heat through without boiling.
Notes
