  • 1.5 cup peeled, diced apples Granny Smith or Honeycrisp are great choices.

Preparation Steps

  • Preheat the oven to 350°F (175°C). Prepare a muffin tin by lining it with liners.
  • In a mixing bowl, combine flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  • In another bowl, whisk together the egg, milk, and melted butter until well blended.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the diced apples.
  • Fill the muffin cups about 2/3 full with the batter.
  • Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  • Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For added crunch, sprinkle with chopped nuts before baking. These muffins pair wonderfully with coffee or tea!
