Preparation Steps
Preheat the oven to 350°F (175°C). Prepare a muffin tin by lining it with liners.
In a mixing bowl, combine flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
In another bowl, whisk together the egg, milk, and melted butter until well blended.
Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the diced apples.
Fill the muffin cups about 2/3 full with the batter.
Bake for 20-25 minutes or until a toothpick inserted comes out clean.
Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For added crunch, sprinkle with chopped nuts before baking. These muffins pair wonderfully with coffee or tea!
