  • 1.5 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can canned diced tomatoes 15 oz, drained
  • 1.5 cups chicken broth low sodium, or homemade
  • 1 can canned white beans 15 oz, drained
  • 1 cup heavy cream for creaminess
  • 1 tbsp olive oil for sautéing
  • 2 tsp cumin for flavor
  • 1 tsp chili powder for heat
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation Steps

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté until translucent, about 5 minutes.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Add chicken pieces, cumin, chili powder, salt, and black pepper; cook until chicken is no longer pink.
  • Pour in chicken broth and bring the mixture to a boil.
  • Reduce the heat and add canned tomatoes and white beans; simmer for 15 minutes.
  • Stir in the heavy cream and cook for another 5 minutes until warmed through.
  • Serve hot, garnished with your favorite toppings.

Notes

Add chopped cilantro or avocado for additional flavor. Serve with cornbread for a complete meal.
