Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat.
Add diced onions and sauté until translucent, about 5 minutes.
Stir in minced garlic and cook for another 1-2 minutes.
Add the chicken pieces to the pot and brown on all sides.
Pour in chicken broth and bring to a boil.
Reduce heat and mix in the green chilies, white beans, chipotle powder, cumin, salt, and pepper.
Simmer for 25 minutes, stirring occasionally.
Finally, stir in the heavy cream and heat through.
Notes
Serve with lime wedges and cilantro for added freshness.
