CHICKEN SPAGHETTI CASSEROLE

A comforting baked chicken spaghetti casserole with tender shredded chicken, creamy soups, cheddar cheese and a touch of garlic and onion — perfect for weeknight dinners or potlucks.

  • 8 oz spaghetti (dry)
  • 3 cups cooked shredded chicken
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup milk
  • 2 cups shredded cheddar cheese reserve 0.5 cup for topping
  • 1 cup onion, finely chopped
  • 0.5 cup bell pepper, chopped
  • 1 tbsp garlic, minced
  • 2 tbsp butter
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika optional
  • 2 tbsp fresh parsley, chopped for garnish

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.
  • Cook the spaghetti according to package directions until just al dente. Drain and set aside.
  • In a large skillet over medium heat, melt the butter and sauté the chopped onion and bell pepper until softened, about 4–5 minutes. Add the minced garlic and cook for 30 seconds.
  • In a large bowl, combine the cream of mushroom soup, cream of chicken soup, milk, salt, black pepper and paprika. Stir until smooth.
  • Add the cooked spaghetti, shredded chicken, sautéed vegetables and 1.5 cups of the shredded cheddar to the bowl. Toss gently to combine.
  • Transfer the mixture to the prepared baking dish. Sprinkle the reserved 0.5 cup cheddar cheese evenly over the top.
  • Bake in the preheated oven for 25–30 minutes, until the casserole is bubbly and the cheese is melted and lightly golden.
  • Remove from the oven and let rest for 5 minutes. Garnish with chopped parsley, slice, and serve warm.

Notes

This casserole can be made ahead and refrigerated before baking; add 5–10 minutes to the bake time if baking straight from chilled. Swap cream of mushroom for cream of celery if preferred.
