CHICKEN PARMESAN CASSEROLE

A comforting, cheesy chicken parmesan casserole made with tender shredded chicken, pasta, marinara sauce and a crispy Parmesan breadcrumb topping. Quick to assemble and perfect for weeknight dinners.

  • 3 cups cooked shredded chicken rotisserie or poached and shredded
  • 12 ounces uncooked penne pasta or rigatoni
  • 2 cups marinara sauce homemade or store-bought
  • 2 cups shredded mozzarella cheese
  • 0.5 cups grated Parmesan cheese
  • 0.75 cups plain breadcrumbs for topping
  • 2 large eggs beaten, to bind
  • 0.25 cups milk any milk
  • 2 tablespoons olive oil to toast breadcrumbs
  • 1 teaspoon salt adjust to taste
  • 0.5 teaspoons black pepper freshly ground

Preparation Steps

  • Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.
  • Cook the penne pasta according to package directions until al dente. Drain and set aside.
  • In a large bowl, combine the cooked shredded chicken, cooked pasta, marinara sauce, 1.0 cup of the shredded mozzarella, 0.25 cup Parmesan, beaten eggs, milk, salt and pepper. Mix until evenly combined.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • In a small skillet, heat the olive oil over medium heat. Add the breadcrumbs and toast until golden, stirring frequently, about 3 to 4 minutes. Stir in the remaining 0.25 cup Parmesan.
  • Sprinkle the remaining mozzarella over the casserole, then evenly top with the toasted breadcrumb mixture.
  • Bake in the preheated oven for 20 to 25 minutes, until the cheese is melted and the top is bubbly and golden.
  • Remove from the oven and let the casserole rest for 5 minutes before serving. Garnish with extra grated Parmesan or chopped fresh basil if desired.

Notes

This casserole is great for using up leftover chicken. To make ahead, assemble the casserole, cover and refrigerate for up to 24 hours before baking. Freeze cooked portions for up to 2 months.
