Preparation Steps
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and place a wire rack on top if available.
Cut each bacon slice into thirds so you have enough pieces to wrap each smokie.
Wrap each little smokie with a bacon piece and secure with a toothpick. Place wrapped smokies on the prepared rack or directly on the lined baking sheet.
In a small bowl, stir together the packed brown sugar and melted butter until combined and slightly loose in consistency.
Brush or spoon the brown sugar mixture over each bacon-wrapped smokie, coating evenly. Reserve a little mixture for basting halfway through baking if desired.
Bake in the preheated oven for 20 to 25 minutes, or until the bacon is crisp and the sugar is caramelized. If using a rack, excess fat will drip off and bacon will crisp more evenly.
Remove from oven and allow to cool for a few minutes so the sugar sets. Serve warm on a platter.
Notes
For extra kick, add a pinch of cayenne to the brown sugar mixture. These can be prepared ahead and reheated in the oven before serving.
