  • 2.5 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 0.25 cup packed brown sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 0.5 cup milk use whole or 2% for best texture
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and diced about 2 cups diced
  • 0.5 cup chopped walnuts optional

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment if desired.
  • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon until evenly combined.
  • In a separate bowl, beat the eggs and then whisk in the vegetable oil, milk, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  • Fold in the diced apples and chopped walnuts (if using) until evenly distributed through the batter.
  • Spoon the batter into the prepared loaf pan and smooth the top. Optionally sprinkle a little extra cinnamon sugar on top for a crunchy crust.
  • Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  • Remove from the oven and let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Store wrapped at room temperature for up to 3 days or freeze slices for up to 3 months. Warm slices briefly before serving for best texture.
