Preparation Steps
Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment if desired.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon until evenly combined.
In a separate bowl, beat the eggs and then whisk in the vegetable oil, milk, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
Fold in the diced apples and chopped walnuts (if using) until evenly distributed through the batter.
Spoon the batter into the prepared loaf pan and smooth the top. Optionally sprinkle a little extra cinnamon sugar on top for a crunchy crust.
Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Remove from the oven and let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Store wrapped at room temperature for up to 3 days or freeze slices for up to 3 months. Warm slices briefly before serving for best texture.
