Instructions
Preparation Steps
Preheat your oven to 350°F (175°C).
In a large bowl, beat the eggs and sugar together until creamy.
Incorporate the mascarpone into the egg mixture until smooth.
Whip the heavy cream separately until soft peaks form.
Gently fold the whipped cream into the mascarpone mixture.
Combine the coffee with liqueur in a shallow dish.
Quickly dip each ladyfinger into the coffee and layer them in a springform pan.
Spread half the mascarpone mixture over the ladyfingers.
Repeat with another layer of dipped ladyfingers and remaining mascarpone.
Chill the cheesecake in the refrigerator for at least 4 hours.
Before serving, dust the top with cocoa powder.
Notes
For a twist, try adding a layer of fruit like raspberries between the mascarpone layers.
