  • 1.1 cup all-purpose flour
  • 0.75 cup granulated sugar
  • 0.5 cup unsalted butter softened
  • 2 large eggs at room temperature
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 cup milk any kind
  • 1 cup fresh strawberries diced

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, sift together the flour, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet mixture, alternating with the milk until well combined.
  • Fold in the diced strawberries gently.
  • Spoon the batter into lined cupcake tins, filling them about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cupcakes cool on a wire rack before serving.

Notes

Add a sprinkle of powdered sugar on top for an extra touch.
