Whenever we make lo mein, we always use shrimp because it’s delicious and convenient, but you could easily substitute chicken or vegetables instead.

Ingredients:
Noodles, dried, 4 ounces; your choice of ramen or egg (seasoning packets discarded)
Oil from 1 tablespoon of vegetables
8 ounces of peeled, deveined, and tail-off medium shrimp
You can use 4 cups of coleslaw mix or cut cabbage instead.
a half a red or yellow bell pepper, sliced
a pinch of grated fresh ginger, or one teaspoon
Two minced garlic cloves
SAUCE
Add 3 tablespoons of low-sodium soy sauce to the mix.
1-tablespoon hoisin sauce
1/2 teaspoon salt
1/25 of a cup of dark brown sugar
1/2 tsp. toasted sesame seeds
Instructions:
Step 1:
Gather the sauce ingredients in a separate bowl and set aside. Then, prepare the noodles as directed on the package, and set aside to cool completely before using.
Step 2:
Warm the oil in a large saucepan over moderate heat. Just before adding them to the skillet, season the shrimp with salt and pepper. Put it in the oven for about two minutes, or until the meat starts to become pink. Take out of the frying pan.
Step 3:
A little more oil, if you like, and then more coleslaw mix and bell pepper. For about 3–4 minutes, or until it begins to soften, stir and cook it. Finally, after about 30 seconds, throw in some ginger and garlic.
Step 4:
Put in the shrimp and the sauce and mix well. Cook for 2 minutes, or until shrimp is opaque all the way through. Toss the noodles into the mixture.
Step 5:
Eat up!
Tips and variation
You may find egg noodles in the grocery store either fresh or dried. If you don’t have any egg noodles on hand, you can substitute spaghetti instead.
In order to preserve the noodle’s texture and flavor, it is best not to rinse them after cooking. Keeping them starchy will help the sauce stick better to the shrimp and vegetables.
Extras can be kept in the fridge for up to three days if sealed properly.
Reheating can be done in the microwave or a saucepan.
