Delicious and quick 30-minute Ground Beef Gyros. Flavorful ground beef seasoned with a Greek spice combination is sandwiched between layers of fresh lettuce, tomato, cucumber, and red onion in a pillowy pita. Sprinkle some feta cheese and homemade tzatziki sauce over the gyro and serve.

To me, gyros are like tacos, but made with Greek ingredients. Both gyros and tacos feature a base of meat, which is then covered with fresh veggies, a savory sauce, and a shell to keep everything together. Since this is a recipe for ground beef gyros, the similarities are striking. If you’re familiar with the process of making authentic gyro meat, you’ll know why I use ground beef in my version. It greatly simplifies matters.

Warm, seasoned beef wrapped within a soft pita with crisp vegetables and tangy tzatziki sauce is one of my favorite meals ever. The flavor is superb when everything is combined.

Ingredients:

1 and a half pounds of ground beef
Add salt to taste, starting with 1/4 teaspoon
Approximately 14 teaspoon of pepper, or to taste
3 tsp. olive oil
2 cups of coarsely chopped green or red peppers, or 1 cup of each
Small can of RoTel diced tomatoes and chopped peppers (mild OR hot), drained
One cup of chopped onion, coarsely
In the microwave, soften 4 pita breads until they are entire.
Optional: 1/2 cup sour cream plus 1/4 cup blue cheese crumbles
4 sheets of aluminum foil, 12 by 12 inches

Instructions:

To ensure that there is no pink meat left in the ground beef, cook it until it is completely done. To the ground beef, add the olive oil, peppers, and onions, and then cook until the onions are translucent and the peppers are softened.
You may now mix in the RoTel tomatoes and peppers and cook them thoroughly. Adjust the seasoning to your taste.
Wrap the pita bread in a couple wet paper towels to keep it moist. To make them more malleable, heat them in the microwave for a few seconds at a time.
Place a hot pita on a sheet of aluminum foil and top it with a heaping 1/4 of the ground beef, onion, pepper, and tomato mixture.
Wrap the filling in the aluminum foil and the pita bread gyro-style, and top with sour cream and blue cheese if you like.
The remaining three pita breads should be treated similarly.
