Making your own meatballs from scratch is a rite of passage in many Italian households. I learned from my future mother-in-law how to create my own. Hers is a hearty beef sauce, so when I get a hankering for meatballs in the middle of the week, I use my slow cooker. This dish is not microwaveable, but it is simple, requires few ingredients, and the meatballs can be frozen and used for multiple dinners if you make enough of them, as I often do.
Ingredients:
Sauce ingredients:
1 peeled and sliced onion
one sliced garlic clove
Tomatoes, 2 cups worth, chopped or crushed
one bay leaf, salt, and oil
In preparation for the meatballs
Peel and finely slice half a big onion
1 minced garlic clove
1 kilogram of ground beef (it can be half pork and half beef)
Three finely chopped garlic cloves
A half kilo of ground meat (equal parts pork and beef is fine)
1-1/2 eggs
Finely chopped herbs, salt, oil, and freshly ground black pepper c/n
Two-thirds of a cup of bread crumbs
Cheese, grated, 2 and a half cups
Croissants made of fresh mozzarella or other kinds of cheese
Instructions:
Chop an onion, then sauté it in oil with some seasonings. In order to achieve a golden brown and transparent onion, stirring should be done often. Cook the tomato for 15 minutes at a low heat.
Recipe for Meatballs:
Toss the onion in with oil and let it cook until translucent. Then, using clean hands, thoroughly combine all the meatball ingredients in a bowl.
The meatballs should be about the size of a walnut, and you should bake them in a single layer.
Put it in the oven and bake at 400 degrees for 15 minutes.
When bubbles form in the sauce after being heated, add the meatballs. Cook for 20 minutes over low heat, stirring occasionally.
Slice the loaf of bread in half lengthwise. Make a meatball sub by slicing the meatballs in half and pushing them between two slices of bread with a fork. Put some pizza sauce on top, then layer on the cheese. Melt the cheese in a hot oven or toaster.
