Look! Chicken is a crowd-pleaser. There are more chicken dishes I need to make at home than there are characters in “Game of Thrones.” Lovely, tasty chicken has a way of warming your heart. Of all the chicken dishes I’ve made, this one is by far the most popular. You probably did or didn’t have it as a kid. I ate a lot of it as a kid, but even when I thought I was done with it, I kept craving it. Now, whenever I want to prepare a meal with chicken, I have to make a deliberate decision to not do this in my own home. The tender, juicy chicken is a scrumptious byproduct of this method.
Sour cream was an ingredient in my mom’s original recipe. However, I admit to being a mayonnaise fanatic, and the amount called for in this recipe is perfect for enhancing the other flavors and tenderizing the chicken without being overpowering. The chicken from Make It Yourself is one of those recipes where you can follow the instructions, make a small amount, and if you like it, serve it to the rest of your family.
Ingredients:
Chicken breasts weighing one pound
Mayonnaise, about 2 to 3 cups’ worth
Shredded Parmesan Cheese (1/2 Cup)
We’ll use 1 tsp of garlic powder.
One Tablespoon of Seasoning Salt
1/2 tsp. pepper
Instructions:
Step 1:
Make sure your oven is preheated to 375 degrees F. Combine mayonnaise, Parmesan cheese, garlic powder, seasoning salt, and pepper in a small bowl and stir to combine.
Step 2:
Put the chicken in a baking dish and sprinkle the Parmesan mixture over it. Wait 40–45 minutes, or until an instant-read thermometer inserted into the chicken reads 165 degrees F. Put it on a plate and dig in!
Tips
Use sour cream in place of mayonnaise if you prefer. A small amount will do, just enough to soften the chicken and bring out its natural sweetness.
